Chicken Banana Pepper Popper Pita - Work In Progress

Playing around in the kitchen I came up with the Chicken Banana Pepper Popper Pita.  I had a blueberry compote that I'd made for a no-bake cheesecake for the family after dinner dessert.  I didn't want to waste the left overs so I thought maybe I could put it in a sandwich.

Chicken
Cream Cheese
Blueberry Compote
Banana Pepper
BBQ Sauce
Sharp Cheddar

First I let the thin sliced chicken soak in the juice of the banana peppers.  Next I heated up the chicken with a thin glaze of BBQ sauce, I wanted the hint of flavors but I didn't want it to over power anything.  I put a generous layer of cream cheese inside the pita, followed by the warmed chicken breast slices, and sprinkle in finely diced banana pepper.  The banana pepper is the nod to your normal "popper" ingredient, the jalapeno.

Next I drizzled in the blueberry compote including the chunks of blueberries.  I wasn't shy with the fruit.  Last but not least I added a touch of sharp cheddar and reheated, sadly in the microwave.

End Result:

It was good but it needs tweaking.  I didn't put enough chicken in the pita, need to double up my meat.  The blueberries were OK but raspberry would be far superior, and it would need to have cracked black pepper added.

Instead of the cheddar I need something that is creamy and gooey with a stronger flavor.  The sandwich needs to be more ooey gooey just like a popper.  I might exchange that banana pepper for a jalapeno, but that isn't very original.

Over all it was quite good but needs to have slightly stronger flavors and MUST grill the pita!  Need it to have a bit of a crunch.

FUN!  I'd love to come back to this and perfect it.  Give it a try!  See if you can come up with the perfect Popper sandwich!

Brainstorming Sandwich #1

I'm thinking about the first sandwich I'll make and I think because Thanksgiving is coming up I might go with Turkey for the meat.  Right now my thoughts are Thanksgiving sandwich, and something completely different and better than the one Monica makes Ross with the Thanksgiving leftovers on Friends.  This won't be a hot sandwich that much I know!

I may do some sort of spin on this Cranberry Mayo Recipe.  I'm thinking more of a sauce than a mayo.

Cranberry Mayo
-  3 tbsp mayonnaise
-  1 tbsp cranberry sauce
-  A squeeze of lemon juice
-  Freshly ground black pepper


And for the bread maybe just keep it simple on toasted white bread, or whole grain like Martha Stewart used in her Turkey Cheddar and Green Apple sandwich shown below.

So far I know my sandwich will have a cranberry sauce and turkey as a nod to Thanksgiving, and that the sandwich will be on bread.  What kind of veggies?  Does it need anything else?  My brainstorming will continue and I'm finding this is going to be a lot harder than I imagined.  The possibilities are endless!

In The Beginning...

Last night I had the idea to make the best sandwich ever.  I remember watching cooking shows since I was a kid, this was even before The Food Network.  Problem is, I can't cook.  OK, I can cook, but I'm not a chef.  But I can make one heck of a sandwich.  So when the idea hit, I told my husband, so I'm going to make the best sandwich ever and you'll have to eat them all, he was all for it.  He wanted me to start that night even though it was midnight.  Problem was we didn't have any food in the house, well not sandwich making food unless he wanted mac and cheese slathered on a toasted English muffin with vanilla yogurt and Siracha dipping sauce.  Like I said, we didn't have much in the house.

So he'd have to wait.  I mentioned my idea again today and told me to go for it.  And that brings me here, I'm going for it!  I hope you follow me on my adventure, make the sandwiches, comment on the sandwiches, whatever!  It'll be great.  Who doesn't love a sandwich, and who doesn't love THE PERFECT sandwich?  Or The Best Sandwich Ever!
